The scientific background of Allulose

The breakthrough in manufacturing Allulose occurred in 1994 when researchers in Japan discovered a specific enzyme (D-tagatose 3-epimerase). This enzyme takes the abundant fructose derived from corn or other plant starches and essentially flips its molecular structure at a very specific point.

That enzymatic rearrangement from fructose to allulose (specifically making it a C-3 epimer of fructose) is the key to its benefits. Because the molecule is shaped differently than standard sugars, the human body does not recognize it as energy. It provides roughly 90% less energy than standard table sugar (about 0.4 calories per gram).
